INGREDIENTS50g chopped butter
1 finely chopped brown onion
1 large trimmed, finely chopped celery stalk
1/4 cup plain flour
2 cups milk
2/3 cup grated cheddar
425g Coles Tuna Chunks In Springwater, drain, flake
One 100g medium bread roll
Olive oil cooking spray
Serve baby cos lettuce.

Preheat oven to 180°C/160°C fan-forced.
Melt and foam butter in a pot over medium heat for 2 minutes. Add celery and onion. Cook onion for 2–3 minutes to soften. Add flour. Mix with a wooden spoon. Stir mixture for 1–2 minutes until bubbles form.
Remove pan from heat. Stir constantly as you add 1/4 cup milk slowly to avoid lumps. Reheat pan on medium. Stir for 5 minutes until sauce thickens and boils. Stop cooking. Mix in cheese and tuna.
Split mixture amongst four 1-cup ovenproof plates. Shred bread roll. Scatter over mixture. Spray oil lightly. Put dishes on a tray. Bake 15 minutes till browned. Serve with tomatoes and lettuce.
