I've made this potato soup for many who named it. It requires work but is worthwhile. For those who don't like bacon, replace 1/4 cup melted butter for the bacon grease and proceed. Not recommended for calorie counters, I serve this soup as a treat.

Cook bacon
Brown and crisp bacon in a Dutch oven over medium-high heat. Drain bacon and most of the fat on paper towels.
Cook Soup
In remaining bacon fat, cook celery, onion, and garlic. Mix vegetables with diced potatoes. Cover everything with chicken stock and return the bacon to the pan. Simmer covered until potatoes are soft.
