Tasty Potato Soup

I've made this potato soup for many who named it. It requires work but is worthwhile. For those who don't like bacon, replace 1/4 cup melted butter for the bacon grease and proceed. Not recommended for calorie counters, I serve this soup as a treat.  

Making Potato Soup Potato soup is easy to make with basic ingredients. The complete recipe is below, but here's a preview:  

Cook bacon Brown and crisp bacon in a Dutch oven over medium-high heat. Drain bacon and most of the fat on paper towels.  

Cook Soup In remaining bacon fat, cook celery, onion, and garlic. Mix vegetables with diced potatoes. Cover everything with chicken stock and return the bacon to the pan. Simmer covered until potatoes are soft.  

Ingredients

1-pound chopped bacon 2 diced celery stalks 1 chopped onion 3 minced garlic cloves  

8 peeled, diced potatoes 4 cups chicken stock, or enough to cover potatoes 3 Tbsp butter 1/4 cup all-purpose flour  

1-cup heavy cream 1 tsp dried tarragon 3 tsp chopped fresh cilantro salt and freshly ground black pepper to taste
