Tasty Injera Recipe

Every Ethiopian restaurant patron knows to order injera. This spongy, tangy, tasty fermented teff batter flatbread may be Ethiopia's most important and famous dish. Injera is used to shovel up stews, meat, and vegetable dishes and soak up sauce, like bread or rice.

When we saw the injera recipe in Luladey (Lula) Moges' books Enebla: Recipes from an Ethiopian Kitchen, we knew we had to make it in the Good Housekeeping Test Kitchen. We were glad we did!  

Ingredients 1 cup teff 1 cup warm water (hot to touch) 1/4 Tsp rapid-rise instant yeast Dough 6c.teff 1 tsp. ground fenugreek 2 c. hot water (to touch), plus more as needed Sparkling water as needed  

Directions In step 1, mix teff, water, and yeast in a basin to make the starter. Mix thoroughly, seal with plastic wrap, and ferment at room temperature for 3 days. In Step 2, the starter and water will separate after 3 days. Pour off the surface water. Success depends on this stage.  

Step 3: Mix teff, fenugreek, water, and dough starter to make the dough. Mix thoroughly, adding warm water 1 tablespoon at a time, until the mixture is smooth and liquid like pancake batter (this stage can require 2 to 4 cups, depending on temperature, humidity, and elevation). Seal with plastic wrap and ferment at room temperature for 24 hours.  

In Step 4, the batter is ready to cook after 24 hours. Pour off surface water. Add 1 tablespoon of unflavored sparkling water (ideally Perrier) at a time and mix well until the batter is lightweight if it is too thick.  

Step 5: Heat a mitad to 250°F. You can use a nonstick stovetop pan or griddle over medium heat without a mitad. Cover the mitad or pan with a thin coating of injera batter. Make it thicker than a crepe and thinner than a pancake.  

See how 1 cup of batter works in your pan and modify as needed. Cook until bubbles form and explode, 3–5 minutes. Cover the mitad or pan with a lid and steam cook the injera for two more minutes until the batter is cooked through. Remove the injera and use the batter again. Step 6: Enjoy with traditional Ethiopian wats.
