The first step in preparing taco cups is to prepare your meat. I use 90% lean ground beef, but ground turkey can also suffice.
The beef is spiced with taco seasoning and a can of small diced tomatoes. It is critical to use little diced tomatoes so that there are no large chunks of tomato in your taco cups.
When your meat is done, it's time to assemble your taco cupcakes! The initial layer consists of wonton wrappers pushed into the wells of a muffin tray.
Then you'll stack another layer of wonton, pork, and cheese on top of the first.
From there, the taco cups are cooked until the cheese melts and the wontons turn golden brown.
You can eat the taco cups as is, but I prefer to add some extra toppings. I top my taco cups with sour cream and a garnish of fresh tomatoes and green onions.
Other wonderful toppings are diced avocado, chopped cilantro, sliced olives, and minced red onion.
