Stuffed Pepper Casserole Recipe

 Ingredients  

Use 2 tablespoons of extra-virgin olive oil. 1 lb. (80%) lean ground beef 2 1"-cut bell peppers of any hue 1 large yellow onion, 1" diced 3 finely sliced garlic cloves 2 tsp kosher salt  

1 tsp. fresh-ground black pepper 1-tsp ground cumin 1 tsp smoked paprika 1/2 tsp dried oregano One 6-oz. tomato paste  

Fire-roasted diced tomatoes, 14.5 oz. 1 1/2 cups beef broth 1 cup basmati rice 2 cups shredded pepper About 8 oz. of jack cheese 1 Tbsp. coarsely chopped fresh cilantro
