Sopa de Fideo (Mexican Noodle Soup) Recipe

Ingredients Two tablespoons olive oil 8-ounces uncooked fideo or angel hair pasta, split into 1-inch pieces Undrained, 14-1/2-ounce can chopped tomatoes 1 sliced tiny onion 2 minced garlic cloves  

2 tsp chili powder 1/2 tsp salt half-tsp ground cumin 6 cups chicken broth Young cilantro leaves  

Heat oil in a Dutch oven on medium. Stir in noodles for 3–4 minutes until gently browned. Blend tomatoes, onion, garlic, and seasonings. Cover, mix until smooth. Over noodles. Bring broth to boil. Simmer uncovered for 5-7 minutes to tenderize noodles. Decorate with cilantro.
