Wok over high heat until heated. Coat with peanut oil. Add meat, ginger, and garlic. Stir-fry pork for 2–3 minutes until barely colored.
Add oyster and soy sauce. In wok, add shallots, 2 teaspoons lime juice, and sesame oil. Heat for 3 minutes in a stir fry. Stir in beansprouts.
Put pork mixture in lettuce leaves. If using, add coriander and peanuts. Serve.
