INGREDIENTS 1 tbsp peanut oil Crush 2 garlic cloves and coarsely shred 2cm ginger. Coles Extra Lean Pork Mince 500g 1 tablespoon soy sauce 2 tablespoons oyster sauce

3 finely sliced shallots 2-tsp fresh lime juice 1-tsp sesame oil 1 cup trimmed beansprouts  

12 big lettuce leaves 1/4 cup fresh coriander 1/4 cup chopped toasted peanuts, optional  

Wok over high heat until heated. Coat with peanut oil. Add meat, ginger, and garlic. Stir-fry pork for 2–3 minutes until barely colored. Add oyster and soy sauce. In wok, add shallots, 2 teaspoons lime juice, and sesame oil. Heat for 3 minutes in a stir fry. Stir in beansprouts. Put pork mixture in lettuce leaves. If using, add coriander and peanuts. Serve.
