Roasted Red Pepper Hummus Recipe

Homemade hummus of all sorts and flavors is far superior to store-bought. After conventional hummus, this roasted red pepper hummus is my fave.  

The tastes are subtle but robust, making it a little more rustic than plain hummus but still incredibly smooth and creamy. It pairs well with all of your favorite dishes.

In other words, it's the original hummus recipe, but with roasted red bell peppers. If you already enjoy conventional hummus, don't worry; the addition of roasted bell peppers won't modify the flavor significantly.  

Instead, you'll detect elements of sweet, smoky, and savory aromas that balance the chickpeas' smoothness and tahini's nutty flavor.  

Cook the chickpeas. I love to use my Instant Pot for this, but you may use any technique you like.  

Of course, you can use canned chickpeas if that's easier. This dish calls for roughly 4.5 cups cooked chickpeas.
