Quick & easy lamingtons Recipe
Enjoy these simple strawberry or raspberry lamingtons.
INGREDIENTS
400g gold spongecake
Raspberry or strawberry jam, 1/4 cup
3 cups coconut shreds
2 1/2 cups chocolate icing
1/2 cup boiling water
Split sponge slabs. Spread jam on bottom sponge and sandwich with top sponge.
Cut filled sponge in 3 lengthways. Make 12 lamington squares by cutting each piece in 4.
Place coconut on a tray. Mix hot water and icing mixture in a large bowl until smooth.
Dip a lamington square in chocolate icing with two forks, coating all sides. Let excess icing fall off.
Roll lamington in coconut to cover. Transfer to wire rack. Make 12 lamingtons with the remaining ingredients.
Serve after 10 minutes of chilling. Lamingtons can be refrigerated for a week in an airtight container.
