Mocha Shortbread Sandwich Cookies Recipe
INGREDIENTS
2 tsp instant coffee granules Two tablespoons hot water 1 cup softened butter 2/3 cup confectioners' sugar
2 cups all-purpose flour
To make chocolate buttercream filling, use 1/2 cup of softened butter.
1-cup confectioners' sugar
3 Tbsp baking cocoa
Sprinkle salt.
1/2 cup melted, slightly chilled semisweet chocolate chips
Preheat oven to 350°. In a small bowl, dissolve coffee granules in hot water. Cool to room temperature.
5-7 minutes in a large bowl, mix butter and confectioners' sugar until creamy. Beat coffee mixture. Mix with flour slowly.
Press dough 1 in. apart on ungreased baking sheets with a cookie press with your preferred disk.
Bake 10-12 minutes until firm without browning. Cool on wire racks from pans.
For 3-5 minutes, whisk butter, confectioners' sugar, cocoa, and salt in a small bowl until frothy.
Beat in melted chocolate slowly. Spread on half the cookies' bottoms; cover with others.
