Ingredients6 medium sweet corn
1/4 cup sour cream
1/4 cup mayo
1/4 cup fresh cilantro minced
2 minced garlic cloves
1 tsp lime zest
2 tbsp lime juice
6 tablespoons Cotija
2–3 tsp chili powder
Grill covered corn for 25–30 minutes over medium heat, turning often, until tender.
Meanwhile, mix sour cream, mayonnaise, cilantro, garlic, lime zest, and juice in a separate bowl. Remove husks and put sour cream on corn. Add chile powder and Cotija cheese. Serve now.
