Madeleines Recipe

Buttery shell-shaped French madeleines—cookies or cakes? Try this madeleine cookie recipe and decide!  

After spending a lot of time in France and loving French pastry, I decided to learn how to create classic madeleines.

These small butter delectables are harder than expected, but they're delicious and excellent for coffee or tea.  

Ingredients Ingredients: - 1/2 cup butter, divided - 2 big, room-temperature eggs 1/2 cup sugar 2 tsp grated lemon zest 1 tsp vanilla extract  

1 cup plus 1 tablespoon all-purpose flour, divided 1/2 tsp baking powder 3 tablespoons confectioners' sugar 1/8 teaspoon salt  

Set aside 1/2 cup butter to cool after melting in a small saucepan over medium-low heat.  

Whisk eggs, sugar, lemon zest, and vanilla in a large bowl for 2-3 minutes on medium speed until frothy and pale. Mix 1 cup flour, baking powder, and salt in another small dish.  

Fold half the flour mixture into the egg mixture until mostly combined. Mix with remaining flour. Fold half the batter into the saucepan with the melted butter until mostly combined. Fold remaining batter into a silky, glossy batter. Chill 30 minutes covered.
