Keto Chicken Broccoli Casserole

This cheesy chicken broccoli casserole is an incredibly simple and tasty keto dinner recipe. It takes 25 minutes to prepare and contains less than 5 grammes of net carbohydrates per serving!  

I don't think I've ever craved casseroles as I do this winter. We've been eating smoked sausage casserole, gammon and cauliflower casserole and keto zucchini lasagna all winter.  

However, this creamy, low-carb chicken broccoli casserole has quickly risen to the top of my list. It is the ideal type of keto comfort food. Rich, hearty, full of flavour and healthy fats.  

Who doesn't enjoy a complete keto meal that can be baked in one dish? The busier we get, the more crucial it is to cut out on unnecessary dishes. If I can prepare the entire dish in one pan, I'm considerably happier at dinnertime.  

This keto chicken broccoli dish ticks all of the boxes. It's rich and filling, with protein, vegetables and healthy fats, and it cooks from burner to oven in a single huge skillet.  

Chicken and broccoli aren't a unique combo, but I got the idea for this skillet dinner while standing in line at the grocery store.  

It was staring me in the face, on the front of Cast Iron Cooking or some other magazine.  

Oh, it looked good. The drizzling cold weather in Portland enhanced the dish's appearance, except for the fact that it contained pasta.
