Healthy Blueberry Cobbler Energy Balls for On-the-Go
Ingredient
– 1 cup dried blueberrie – 1 cup rolled oat – 1 cup raw almond – 1/4 cup almond butter – 1/4 cup honey or maple syrup – 1 tsp vanilla extract
– 1/2 tsp ground cinnamon – 1/4 tsp ground nutmeg – A pinch of salt
Soak the dried blueberries in hot water for about 10 minutes to soften, then remove and pat.
Instruction
In a food processor, pulse the shelled oats and raw almonds until smooth.
Put the softened blueberries, almond butter, honey (or maple syrup), vanilla extract, cinnamon powder, ground nutmeg, and pinch of salt in a food processor
Pulse until mixture is well combined and sticky enough to hold.
You may need to fold the sides of the food processor a few times.
Remove a tablespoon of the mixture and roll it between your fingers into a ball.
Place the energy balls on a parchment-lined baking sheet. chill:
Once all the balls are done, place the baking pan in the fridge for at least 30 minutes to firm up the balls. keep:
Place frozen energy balls in an airtight container. Store in the refrigerator for up to 1 week or freezer for up to 3 months.
Feel free to add some chia seeds, flax seeds, or protein powder for an extra nutritional boost.
