Garlic-Parmesan Roasted Carrots Recipe

This recipe made us question why we roast carrots less. Roasting intensifies and sweetens their flavor. With plenty of umami-packed Parmesan and a hint of lemon, this meal is tempting and will be repeated. Try it—carrots may become your new favorite side.  

The secret to this recipe is adding Parmesan twice. To melt the cheese into the carrots as they tenderize, stir them shortly before roasting. After baking, add lemon juice, fresh parsley, and extra Parmesan to the carrots. It will make carrots prettier and add cheese flavor.  

 Ingredients  

2 pounds peeled small-to-medium carrots (15) 3 finely chopped garlic cloves 2 tablespoons extra-virgin olive oil 3/4 c. finely grated Parmesan, split  

Kosher salt Freshly ground black pepper 2 tablespoons fresh lemon juice 2 Tbsp. chopped fresh parsley  

Step 1: Preheat oven to 425°. Cut carrots crosswise into 2"–3" slices on a bias. Cutting bigger portions in half lengthwise. Step 2: Mix carrots with garlic, oil, Parmesan, salt, and pepper on a large baking sheet. One layer.  

In Step 3, bake carrots for 25-30 minutes until soft and marked with caramelization.   

Step 4: Place carrots on a dish. Add lemon juice. Toss with parsley and 1/4 cup Parmesan.
