These nuts satisfy hunger, but they're more than a snack. Chopped, these make a crispy topping for roasted veggies or vegan yogurt.
Ingredients
2 c. raw cashews (10 oz.)
1 tablespoon extra-virgin olive oil
Kosher salt
tbsp yellow curry powder
2 tsp sugar1/4tsp ground turmeric1/4tsp sweet paprikaFreshly ground black pepper1 finely zested lime and 3 Tbsp. fresh lime juice
Preheat oven to 300°F. Parchment a rimmed baking sheet. Put cashews on sheet. Mix oil and ¼ teaspoon salt, then spread evenly. Bake cashews for 15 minutes, tossing midway, until light golden.
In a small bowl, mix curry powder, sugar, turmeric, paprika, and a few pinches of black pepper with lime juice until smooth.
In step 3, thoroughly coat cashews with spice mixture after removing tray from oven.
Step 4: Return tray to oven, tossing halfway, until cashews are roasted and curry mixture darkens, about 15 minutes more. Cashews crunch as they chill.
Step 5: Spread cashews evenly on a platter and sprinkle with salt and lime zest while still warm. Wait 15 minutes to cool. Serve warm or room temperature.
