White cheddar for deep cheesiness and white American cheese for silkiness are the key. Don't skimp on calories—use whole milk and full-fat cheese. Reduced-fat dairy won't work.
Ingredients
Kosher salt
1-pound elbows or shells
4 Tbsp unsalted butter
1/4 cup all-purpose flour
2 c. whole milk
1-cup heavy cream or half-and-half
1/2 teaspoon dried mustard or Dijon
3/4 pound. shredded sharp white cheddar
5 slices 1/4 pound. white American cheese
Cook pasta al dente in a big pot of boiling salted water according to package guidelines. Drain.
Step 2: Melt butter in pot on medium heat. Whisk in flour to get a thick, lump-free paste. Cook 2 minutes until aromatic but unbrowned.
Stir in milk, cream, mustard, and 1 teaspoon salt on medium-low heat. Whisk sauce for 5 minutes until it bubbles and thickens.
Stir cheeses with a rubber spatula or wooden spoon until fully melted in Step 3. Stir cooked spaghetti to coat.
