Copycat Kudos Bars Recipe

If you grew up in the 1990s, a Kudos Bar may remind you of a chocolatey, peanut buttery, crunchy yet chewy after-school delight (and lunchtime bartering).   

 Kudos were always sold as granola bars but tasted like candy bars (score one for the youngsters!). Although they're no longer sold, my no-bake Kudos Bars are better than ever.

The gooey, caramel-like sauce and rice cereal and oats for crunchy texture are the key.  

For optimal results, follow these steps to ensure success in this dish. First, prepare the pan with parchment or wax paper before filling it to make removing the bars easier without losing the chocolatey coating.  

Spray your measuring cups with cooking spray before measuring sticky ingredients like honey or corn syrup. Waste will decrease. Use a basin large enough to dip an entire bar in chocolate to avoid fighting.  

Finally, crush the cereal mixture with the back of a measuring cup to compact it. This will keep bars together and improve bite.  

Ingredients Cooking spray 2-cup Rice Krispies cereal 1 cup old-fashioned rolled oats 1/2 c. packed light brown sugar 1/4 cup honey or light corn syrup 4 Tbsp unsalted butter  

2 Tbsp smooth peanut butter Kosher salt, 1/4 tsp 1 1/2 cups semisweet chips 2-tsp coconut oil Optional little M&Ms for decorating
