Cookie Lovers Cheesecake Bars Recipe

Make these cheesecake bars for your cookie monster or yourself. They have homemade chocolate chip, Chips Ahoy, and Oreos cookies with a creamy blue cheesecake topping to emphasize the monster motif.  

When you can't decide what to bring to a potluck or birthday party, make these—everyone will love them.  

Against food coloring? You can skip it or tweak it for a holiday celebration—it's just for fun. Want a different Oreo flavor or can't find small ones? I prefer mint, but I really like the Christmas chocolate-covered ones.  

I enjoy peanut butter Oreos, but all Oreos are delicious, and you can experiment with any flavor you choose. If you use larger ones, smash them before adding them to the cheesecake. Same with Chips Ahoy—minis are cute, but smashed larger ones work too.  

Ingredients for crust: Cooking spray 1/2 stick softened butter 1/2 cup packed brown sugar 1/4 cup granulated sugar 1 big egg   

1 tsp pure vanilla extract 1/4 c. all-purpose flour Kosher salt, 1/2 tsp 1-c. semisweet chocolate chips For cheesecake: 2 (8-oz.) softened cream cheese blocks  

1/4 cup sour cream 2/3 cup granulated sugar 3 big eggs 1 tsp pure vanilla extract  

1-tsp kosher salt Blue food coloring miniature chips Ahoy 1/2 cup small Oreos
