Breakfast Ramen Recipe

One of my favorite pantry hacks is ramen. I've made beef & broccoli ramen and ramen carbonara for midweek dinners and viral TikTok ramen for late-night lunches.   

I explored their versatility. I make cheap and quick ramen noodles into a breakfast fantasy by adding bacon and creamy scrambled eggs.  

This 15-minute ramen is the perfect savory meal when you're tired of bacon and eggs.    

Ingredients: (2) Ramen packs (seasoning packets removed) 3 bacon slices, chopped 1/2-in 2 big eggs  

3/4 cup shredded sharp cheddar (2) sliced scallions (optional) Sriracha or other hot sauce Freshly ground black pepper  

Follow package instructions to boil noodles. Reserve 1/4 c. boiling water to loosen sauce afterward. Drain and oil noodles to prevent sticking. Step 2: Heat a skillet on medium heat. Brown and crisp bacon.  

Add noodles to skillet and cover with bacon and oil (Step 3). Turn off heat. In Step 4, beat eggs with a fork. Add cheese. In step 5, add noodles and bacon to the egg-cheese mixture.  

 Mix cheese until melted. If the sauce is too thick, add 1 tablespoon of pasta water at a time, stirring, until smooth. Step 6: Divide across bowls. If preferred, add scallions, ground pepper, and spicy sauce.
