This was the first hummus recipe I posted on this blog. Around 2017, I had recently found beets and was determined to include them in every meal. Not such a bad thing because beets are quite healthy (source).
Now, I understand that some of you despise beets. And that's completely fine. However, some of you may be unfamiliar with beets.
Or if you'll even enjoy them. I mean, I sat through 9 seasons of The Office, listening to Dwight ramble about his beet farm while knowing nothing about beets.

Begin by placing the peeled and cooked beets into the bowl of a large food processor. Process until only tiny particles remain.
Add the remaining ingredients (cooked chickpeas, tahini, lemon juice and zest, garlic, and a bit of salt) to the bowl and process until smooth,
scraping down the sides with a rubber spatula as needed (about 2-3 minutes). Remove the cover and add the olive oil. Continue processing until smooth and creamy.
