Bake-Free Lemon Cake Pops

The best dessert is cake pops. Quick, easy to eat on the go, and full of childhood reminiscence. Mae Elizabeth's cake pop recipe uses lemon, maple syrup, chia seeds, oats, and dates to make dessert without sugar.  

This dish has no extra sweets or weird chemicals and uses P2 Almond Protein, a tasty protein powder produced from almonds and other natural components. Next time you want something sweet and protein-packed, make these No-Bake Lemon Cake Pops!  

INGREDIENTS 1-cup PB2 Almond Butter Protein 1/2 cup mixed oats 10-pitted Medjool dates 2 tablespoons maple or Agave syrup Half-lemon juice (1 tablespoon) The zest of one lemon 1 Tbsp chia seeds  

Blend the oats until powdery in a blender or food processor. Squeeze the pit from unpitted dates. Mix in the remaining essential ingredients. Taste and add agave or lemon for sweetness or acidity.  

Put 12 dough balls on a parchment-lined platter. Let chill 10–20 minutes. While the balls freeze, put holes in a cardboard box for upright cake pops. Make them upside down on parchment paper without a box.  

Melt chocolate after chilling the balls. Microwave chocolate for 1 minute at 50% power to melt. Stir, microwave 30 seconds more. Repeat until melted. Insert cakepop/lollipop sticks into each ball after dipping them in chocolate. It sticks better!  

Insert your "cake pops" into the cardboard box holes. Let's decorate! Sprinkle sprinkles, crushed coconut, chia seeds, etc. over white chocolate!  

Cool 10+ minutes. Serve immediately or refrigerate in an airtight container.
