Air Fryer Tostones Recipe

Traditional tostones are a savory snack prepared from unripe green plantains. However, maduros use ripe sweet plantains. These air fryer tostones are twice-fried but as crispy as the conventional version with less fat and no terrifying pot of hot oil!  

First, cook them once, crush to flatten, soak them in seasoned water, and then cook again to crisp the outside. The crunchy nibble is great for dipping in the creamy mojo sauce.  

Ingredients 2 medium green olive oil cooking spray 3. c. warm water 2. 1/4 tsp. kosher salt, divided + 1 pinch garlic powder, 1/2 tsp. 1/4 c. coarsely chopped fresh cilantro 1/4 cup plain full-fat Greek yogurt   

1 tablespoon extra-virgin olive oil 1 tbsp fresh lime juice 1 tablespoon fresh orange juice 1/4 tsp ground cumin    

Trim and discard plantains' ends. Skip the flesh and cut the plantain peel with a knife. Cut plantain crosswise into 1" rounds. Remove each slice's peel with your fingers or a spoon; discard.  

In Step 2, lightly coat an air-fryer basket with cooking spray. In batches, layer plantains in basket. Cook at 400° for 6 minutes until soft enough to smash and stay together. Step 3: Transfer plantains to a work surface. Flatten into a disk with cup bottom.  

Step 4 Mix water, 2 tsp salt, and 1/2 tsp garlic powder in a large basin until salt dissolves. Soak tostones in water mixture for 5 minutes, then dry with paper towels. Spray dried tostones on both sides with cooking spray.  

Step 5: Arrange tostones in a single layer in air-fryer basket, working in batches. Add salt and cook at 400° for 7 minutes until golden and crisp. Step 6: Mix cilantro, yogurt, oil, lime juice, orange juice, cumin, 1/4 tsp. salt, and garlic powder in a small bowl. Include sauce with tostones.
