Muffins with ham, cheese, and tomatoes
INGREDIENTS
- 90g chopped shaved ham - 2/3 cup grated cheddar cheese - 3/4 cup self-raising flour
- 6 cherry tomatoes, halved - 1 tbsp minced flat-leaf parsley - 1/3 cup milk
2 tbsp olive oil One lightly beaten egg, salt, and pepper.
Preheat oven to 200°C.
Put self-raising flour, salt, and pepper in a big basin.
Add egg, shaved ham, cheddar cheese, olive oil, milk, and flat-leaf parsley to a separate bowl. Combine.
Fold the ham and cheese mixture into the flour until barely incorporated.
Spoon mixture into a lightly greased 12-hole mini muffin pan.
Press a cherry tomato half on each muffin top. Bake 15-18 minutes till golden. Serve warm or room temperature.
