Grilled Artichokes Recipe

– 2 large artichoke – 2 lemons, halved (one for rubbing, one for serving) – 3 tablespoons olive oil – 4 cloves garlic, minced

Ingredients

– Salt and black pepper, to taste – 2 tablespoons fresh parsley, chopped (for garnish) – Optional: Melted butter or aioli for dipping

Prepare the Artichokes: – Start by cutting off the top inch of the artichoke and the bottom stem, leaving about an inch of the stem attached. – Using kitchen scissors, trim the sharp tips off the remaining leaves.

Instruction

– Cut the artichokes in half lengthwise, and use a spoon to remove the fuzzy choke from the center of each half. Immediately rub the cut sides of the artichokes with a lemon half to prevent browning.

Boil the Artichokes: – Bring a large pot of salted water to a boil. Add the artichoke halves and boil for about 15-20 minutes until they are just tender. You should be able to pierce the heart with a knife with little resistance.
