Easy Pumpkin Soup Recipe

It's creamy, lightly spiced, and hearty without being heavy. We've tried many pumpkin soup recipes, and this one has everything we want.  

INGREDIENTS 2 tablespoons Coles Classic Olive Oil 1 finely chopped onion 1 finely sliced leek (white half only) 1 smashed garlic clove 1/2 tsp ground coriander

1 tsp ground cumin 1/2 tsp grated fresh nutmeg 1 kilogram diced peeled pumpkin 1 big diced peeled potato Chicken or veggie liquid stock 1L Massel 1/2 cup thin cream  

Cook onion and leek in oil in a large saucepan over low heat for 2-3 minutes until softened but not browned.  

Add garlic, coriander, cumin, and nutmeg and stir for 30 seconds. Bring pumpkin, potato, and stock to boil.  

Lower heat, cover, and simmer 30 minutes. Cool slightly, then combine in batches.
