Cowboy Butter Recipe

Cowboy butter, a flavorful spread, can be spread on steaks, burgers, baked potatoes, and grilled corn.  

Many viral recipes have unknown beginnings, but cowboy butter may have come from Mr. Donahue's, a small, now-closed New York City restaurant.

INGREDIENTS 1/2 cup softened butter 1/2 minced shallot 1 tbsp lemon juice 1 tbsp Dijon 1 tablespoon fresh parsley minced Prepared horseradish, 1 tbsp 2 tsp minced chives  

One minced garlic clove One teaspoon minced fresh thyme 1/4 tsp kosher 1/4 tsp coarse pepper 1/8 tsp paprika 1/8 tsp cayenne  

Whisk ingredients in a small bowl until combined. Wrap in plastic and roll into a log. Refrigerate until cold. Remove wrap and slice or arrange in butter dish. Store in an airtight jar in the fridge for 1 week or freeze for 3 months.
