But this Greek-style Chicken Lemon Soup is lighter fare, perfect for a quick spring lunch. I first tried Avgolemono Soup a long time ago while eating lunch with my aunt. We were both initially drawn to the bright, fresh flavour.

Classic Avgolemono combines orzo or rice with chicken, egg, and lemon. Simply substitute the orzo with cauliflower rice or another low-carb rice alternative to make it keto-friendly.
If you own a copy of Keto Soups & Stews, this soup will look familiar. But I did make a few changes, including adding a little more lemon juice for flavour.
I also included additional chicken for a low-carb, high-protein meal. It still tastes as fresh as it always did, but it's a little more fulfilling.
