Cast-Iron Steak

Any night of the week, you can cook a flawlessly seared cast-iron steak. Learn how to cook steak in a skillet in 10 minutes.  

Few dishes are more iconic than cast-iron steak. Steak with smashed potatoes, roasted asparagus, and a wedge salad is a hearty, elegant supper.  

You can visit the best restaurant in your state, but making steak at home is easy and rewarding.  

Cooking steak for the first time can be scary. We created an easy cast-iron steak dish you can make every day of the week. Our approach requires kosher salt, a fresh steak, and a cast-iron skillet.  

INGREDIENTS Beef New York strip or ribeye steak, 1 pound, 1 inch thick 3 tsp kosher salt, divided  

Let steak stand 45-60 minutes after removing from fridge and salting with 2 tablespoons.  

Heat a cast-iron skillet on high for 4-5 minutes until very hot. Sprinkle remaining 1 teaspoon salt in skillet bottom; dry beef with paper towels.  

Fry steak in skillet until easily movable, 1-2 minutes; flip and place steak in another portion. Cook steak 30 seconds, then move it, pressing slightly to achieve even skillet contact. Turn and flip until cooked to desired doneness (medium-rare, 135°; medium, 140°; medium-well, 145°), 1-2 minutes.
