We've braised pot roast, made cake, and slow-cooked pulled pork with Coke. Why not roast chicken with it? Our Coca-Cola chicken dish uses a can of cola to sweeten a sour barbecue sauce.
Its gentle sweetness and caramel depth complement the chicken, onions, and garlic for a familiar and interesting midweek dish.
On busy weeknights, this Coca-Cola chicken recipe is perfect for warming meals with few ingredients and no prep.
Ingredients1/2 cup chopped onion
Two tablespoons canola
4 4-ounce boneless skinless chicken breast halves
1 12-ounce can cola
1 cup ketchup
1/8 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
4 1/2 tsp cornflour
Three tablespoons cold water
In a large skillet, sauté onion in oil until soft. Add chicken; brown all sides. Carefully add cola, ketchup, garlic powder, salt, and pepper.
A chicken thermometer should read 170° after 25–30 minutes of simmering. Keep the chicken warm after removal.
Mix cornflour and cold water until smooth; add to skillet slowly. Start boiling and whisk for 2 minutes to thicken. Return chicken to pan and heat.
