Smoked Salmon Sandwich

Without the bagel, this is a New York staple. Smoked salmon, onion, capers, and tomato make this breakfast delicious,   

but replacing the oversize bagel with whole wheat toast saves 200 calories and replaces refined carbs with fibre.

A smoked salmon sandwich you can feel good about eating every day of the week takes about as long to make as pouring cereal, so why not? A classic New York lunch, an everything bagel for breakfast, and a Mets hat to complete the look!  

INGREDIENTS 1/4 cup whipped cream cheese 8 pieces toasted whole-wheat or 9-grain bread 2 Tbsp minced, washed capers 1/2 finely sliced red onion

Four bread slices with 1 tablespoon cream cheese each. Top each with capers, onion, greens, and two tomato slices.  

Salt the tomato lightly, then add as much pepper as you like (this sandwich needs much).  

Place a couple slices of smoked salmon over the tomatoes and top with the remaining toasted bread.
