Chicken Sandwich with Chimichurri

Every American chain menu has chicken sandwiches, which customers choose as a healthier alternative to red meat.  

It is breaded and fried 80% of the time, and when it isn't (like Panera's Chipotle Chicken), it's so loaded with condiments and hefty bread that you'll be lucky to eat less than 1,000 calories. Definitely not a healthy hamburger substitute.  

Chimichurri, an Argentine herb-based sauce that makes shoe leather taste like fine dining, sweet peppers, sharp raw onions,  

and spicy greens give this grilled chicken sandwich Herculean flavor. Finding a 310-calorie sandwich or side salad at a restaurant is difficult.  

INGREDIENTS 4 6-ounce boneless skinless chicken thighs Salt and black pepper to taste Two cups mixed baby greens 4 split, lightly toasted whole-wheat sesame buns  

1/2 finely sliced red onion 1/2 cup roasted red peppers, jarred 1/2 cup chimichurri  

Heat a grill, grill pan, or cast-iron skillet. Salt and pepper the chicken on all sides and grill or sear for 3–4 minutes per side until firm and done.  

Distribute mixed greens among bun bottoms. Place a chicken thigh on each bun, then add onions and peppers. After adding chimichurri, top with the other bun halves.
