Tempura-inspired air fryer Green beans will become your favorite healthy snack.
We wanted crispy tempura green beans without deep-frying. Panko bread crumbs provide tempura's irresistible crunch without the need for hot oil or a batter (wet batters don't work well in the air fryer).
Ingredients
- 1/2 lb. trimmed green beans
2 Tbsp all-purpose flour
1 cup panko crumbs
2 big eggs
Olive oil cooking spray
1 finely sliced scallion
2 Tbsp. water
1 Tbsp low-sodium soy sauce
1 Tbsp mirin 1/2 tsp fresh lemon juice
Coat beans in flour in a large basin. Break panko into little pieces with your hands in a shallow basin to help beans stick. Blend eggs in another shallow basin.
In Step 2, shake off extra flour from beans. Press lightly into panko after dipping in eggs.
Step 3 Spray an air-fryer basket with cooking spray in batches. Spray beans with cooking spray and place in basket a single layer 1/4" apart.
Cook 7–9 minutes at 350°, flipping halfway, until crust is brown and beans are cooked.
Step 4: Mix scallion, water, soy sauce, mirin, and lemon juice in a bowl. Serve beans with sauce.
