While chicken thighs have received a lot of well-deserved attention, we think the modest drumstick should too. Handheld foods are scarce, but when they are, they become our favorites.
This meal is inspired by fragrant and umami-filled Cantonese soy sauce chicken with Coca Cola wings, a 1980s and 1990s Chinese favorite.
Air-frying soy-marinated chicken makes it somewhat crunchy and tender instead of poaching it. Use the remaining marinade and Coke to make a sticky, sweet sauce.
Ingredients
About 8 2-pound chicken drumsticks
6. tablespoon soy sauce
3 grated garlic cloves
1 1/2 tsp grated fresh ginger 1/2 tsp ground Chinese five-spice or
Mix soy sauce, garlic, ginger, five spice, and honey in a big basin. Drumsticks should be coated. Wrap in plastic and refrigerate.
Step 2: Marinate chicken for 30 minutes to 1 hour, turning halfway through.
Step 3: Preheat air fryer to 380º. Avoid overflowing the air fryer basket and reserve the marinade as you add drumsticks in batches. Air fry 10 minutes.
Step 4: Add Coca-Cola to the marinade in a small saucepan and heat over high heat while the chicken cooks. Bring to boil. Reduce heat to medium-low and simmer for 2–3 minutes until sauce thickens and coats spoon. Transfer sauce to a large heatproof bowl.
