Mushroom Tacos
The best thing about these mushroom tacos is their simplicity. They are made out of a few basic ingredients:
grilled portobellos, avocado salsa, and pickled red onions, which combine to make the tacos considerably more than the sum of their parts.
They have a great texture and a variety of flavors, including sweet, spicy, acidic, and umami. Still, you can put them together in around 30 minutes.
If you don't have a jar of pickled red onions on hand, prepare them a day (or at least a few hours) in advance.
Otherwise, the first step in preparing this mushroom taco dish is grilling the mushrooms.
This post contains information on my method. Basically, I toss the mushroom caps with olive oil, tamari or soy sauce,
and balsamic vinegar to boost their savory, umami flavor. Then I grill them until they're soft, juicy, and well-charred.
When you remove the mushrooms from the grill, slice them into strips.
