Chocolate Covered Cherrie

This recipe calls for maraschino cherries, butter, powdered sugar, and dark chocolate chips or candy melts.  

Drain the cherries and save some of the cherry juice. Dry the cherries with a paper towel.  

In a large mixing basin, combine the butter, powdered sugar, and a portion of the cherry juice. Using a mixer, combine everything until a dough forms.  

Cover the bowl and refrigerate the fondant mixture. Take tablespoons of fondant and flatten them into discs.  

Place a cherry on each disc, then wrap the fondant around them to form balls. Freeze the balls until they become firm.  

Heat the chocolate chips or candy melts in the microwave. If you're using chocolate chips, add a little shortening to thicken the melted chocolate.  

Dip each cherry ball in chocolate and set on a sheet of parchment or waxed paper.   

After you've dipped all of the balls, pour some melted chocolate on top of each. Allow the cherries to sit until the chocolate is solid, then serve and enjoy.
